This project aims to transform a nutritional product that has demonstrated some effectiveness in reducing metabolic dysregulations of obesity into a commercially acceptable, palatable, affordable, and desirable food product for the general public without adversely impacting its efficacy. It is proposed that Metabar, in partnership with the supporting collaborators, CHORI and the USDA ARS, will modify the sensory characteristics and gluten content of the product and confirm its acceptability through a consumer sensory evaluation. The team is also proposing to conduct a clinical trial to confirm that the modifications do not adversely impact the bioactivity of the nutrition bar. This work may respond to public interest by creating a safe, nutritious and affordable food supply and developing value-added food from agricultural materials.
